I apply a few quick coats of shellac to protect the sides and back from small scrapes before gluing down the bridge and fingerboard. This set (lutherie term for sides and back) is particularly pleasing.

As a rule, my favorite parts of the guitar building process, are those with the simplest methodology. Gluing binding with tape for example. Tape.
